2 Ripe Avocados
¼ cup Cocoa Powder
Maple Syrup
½ cup Unsweetened Coconut Milk
Instructions
In a blender combine the ripe avocados, cocoa powder, maple syrup & coconut milk.
Blend until smooth.
Place in 4 glass cups and refrigerate. Serve topped with coconut shavings.
Ingredients
1 Potato
½ Ripe Avocado
1 tbsp Plain Yoghurt
Cilantro Leaves
Pumpkin Seeds or Pepitas
Salt
Pepper
Instructions
Bake a potato in the oven till the outer layer is well roasted.
Split the baked potato and fill with the mashed ripe avocado.
Top it up with a dollop of plain yoghurt, cilantro leaves and pepitas.
Season with salt & pepper. Serve with a lime wedge.

2 tbsp Lime Juice

2 tbsp Butter
1 tbsp All Purpose Flour
1 cup Almond Milk
2 cups Shredded Low Fat Cheese
Instructions
Combine the garlic, avocados, lime juice & cilantro in a blender and blend until smooth.
Season with salt & pepper and set aside.
In a saucepan, melt the butter, add the flour and stir till it forms a paste.
Whisk in milk until smooth. Once it starts to thicken, add the cheese & stir until it is creamy.
Add the pasta to the sauce and stir to combine.
Top it up with cheese. Serve warm.
